What’s in my freezer????

BREAKFAST

18 cinnamon rolls

12 fruity breakfast burritos

35 sweet potato pancakes

3 homemade blueberry waffles

LUNCH

11 packs of chicken ranch nuggets (5-6 nuggets each pack)

12 packs of sweet potato bites

17 packs of broccoli cheddar nuggets

15 black bean and beef meatballs

DINNERS

Baked Spaghetti- just need to add cheese

5 cups shredded chicken for tacos, flautas, taquitos, etc.

 

I am sure there is even more that I am forgetting about and did not write down. I love doing cooking like this! Today I made spaghetti with meat sauce for John and I, and I made enough that I could also make 2 8x8 pans of Baked Spaghetti to freeze. This is another great way to get a freezer stash!!!!

I am so excited that some of you are looking forward to doing this kind of cooking once the fall arrives. I would love to do cooking parties and such!!!!

My freezer cooking isn't nearly as elaborate as your - you're an inspiration - but I do have some. Meals in my freezer right now: (2) batches chili, (2) meatloaves, (1) thing of homemade pasta sauce, (2) pans of beef enchiladas (first time attempting beef - doesn't freeze as well as the chicken), and whole wheat waffles. I started out with the chili and meatloaf because both use carrots and celery and I hate to waste any of it, this way I can use it all! I need to pour over the links you posted and see if I can find some new recipes to try (I'm trying to do low cholesterol/fat too).
